Austria's oldest café still in operation, founded in 1705, the Café Tomaselli is an institution of Salzburg life. The grand interior with dark wood panelling, marble tables, and uniformed waiters serving from a towering cake display is exactly as it has always been. Dogs are welcome under the tables — an old Salzburg custom. The terrace on the Alter Markt is one of the city's finest outdoor spots in summer. Mozart's family were regulars here.

A genuine, no-frills Salzburg Gasthaus on the famous Getreidegasse (Mozart's birth street), the Wilder Mann is where locals eat when they want Austrian food without tourist pricing. The menu covers traditional Salzburg dishes — Tafelspitz, Wiener Schnitzel, Bauernschmaus — and the dark, vaulted interior has been serving locals since 1648. Dogs are accepted inside; the staff are matter-of-fact about it in the way of authentic Austrian Gasthäuser.

One of Europe's great beer halls, the Augustiner Bräustübl is a monastery brewery founded in 1621 that still brews its own Märzen lager. The enormous indoor hall seats over 1,000; the outdoor chestnut-shaded beer garden seats considerably more. You collect your own stone mug, rinse it at the fountain, fill it from the wooden casks at the tap counter, and choose food from the market stalls inside. Dogs are welcome in the beer garden — and tolerated in the covered outdoor sections. The scale and the atmosphere are extraordinary.

Perched in a historic medieval building directly opposite Mozart's birthplace on the Hagenauerplatz, Zum Eulenspiegel is a romantic, multi-level restaurant across five floors of a 15th-century house. The cuisine is classic Austrian with modern refinement — Salzburger Nockerl (the city's famous soufflé dessert), venison, and seasonal Alpine produce. Dogs are welcome on the ground floor and at terrace tables. The building itself, with its winding staircases and low beams, is part of the experience.
