A stone-walled restaurant tucked inside the medieval walls of La Cité, with a quiet interior courtyard shaded by a giant plane tree where leashed dogs are welcome at the outdoor tables. The chef sources from local Aude producers: black pork from Lacaune, lamb from the Corbières, and seasonal vegetables from Mirepoix. The cassoulet is the dish to order, prepared with white Tarbais beans, Toulouse sausage, and confit duck. A serious, slow-meal address rather than a turn-and-burn tourist trap. Dogs receive a water bowl on arrival.
