The working oyster port of L'Aiguillon is the most authentic place to eat huitres du Bassin in Arcachon. A cluster of producers turn their cabanes into informal tasting tables in season, where you sit at simple benches over the water, a dozen oysters and a glass of Entre-Deux-Mers in front of you, while the tide moves in the channel. Dogs are entirely at home here, tied at a bench leg or sprawled on the boards while you eat. This is producer-direct, unpretentious, and deeply local. The oysters are opened in front of you, served with bread, butter, lemon, and often the local crevettes and pignots. Go at lunch on a sunny day and let your dog watch the oyster boats come and go.
